Good cooking begins with clean decisions. These academy principles supplement—not replace—current local health rules and product instructions.

Clean and separate

Wash hands and food-contact surfaces. Keep raw animal foods and their tools away from ready-to-eat ingredients.

Control temperature

Use a reliable food thermometer where applicable. Keep cold food cold, hot food hot and minimize time in unsafe temperature ranges.

Cool and store promptly

Divide large batches, cool efficiently, cover, date and refrigerate or freeze within locally required limits.

Treat raw dishes differently

Kibbeh nayyeh and other raw animal foods carry increased risk. Use an approved supplier, exceptionally fresh meat, strict cold control and local health guidance; vulnerable people should avoid them.

Preserve by validated methods

Brining, fermenting, drying and oil storage require measured processes. Discard food showing spoilage and never taste to test safety.

Verify allergens yourself

Common academy ingredients include sesame, wheat, dairy, tree nuts, eggs, fish and shellfish. AI tags cannot confirm a product or kitchen is allergen-free.
